🍂 Autumn Recipes

🍁 Autumn Protein Bars (Quick & Simple)

Prep Time: 10 minutes

Cook Time: None (no-bake)

Servings: 8 bars

Ingredients:

  • 1 cup rolled oats
  • 1 scoop vanilla or pumpkin spice protein powder
  • ½ cup natural almond butter (or peanut butter)
  • ⅓ cup pure pumpkin purée
  • 3 tbsp honey or sugar-free syrup
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ¼ cup chopped pecans (optional)
  • ¼ cup dark chocolate chips (optional, for topping)

Directions:

  1. In a large bowl, combine oats, protein powder, cinnamon, and nutmeg.
  2. Stir in almond butter, pumpkin purée, and honey until mixture forms a thick dough.
  3. Fold in pecans if using.
  4. Press mixture evenly into a lined 8x8 pan.
  5. Melt chocolate chips (if using) and drizzle over the top.
  6. Refrigerate for 1–2 hours until firm.
  7. Slice into 8 bars.

Nutrition (per bar, without chocolate):

  • Calories: ~190
  • Protein: 10–12 g
  • Carbs: 18 g
  • Fat: 9 g
